Easy Chimichurri Sauce

Homemade chimichurri sauce is a versatile sauce that works great as a marinade or as a sauce to accompany grilled meats, fish, and more. Or serve it as a side dish or snack. Only 15 minutes of prep!

Ingredients

  • 1 bunch flat-leaf parsley
  • ¼ cup minced garlic
  • 1-2 small de-seeded red chili peppers (I use fresno)
  • 2 tablespoons red wine vinegar
  • ½ lemon juiced
  • 1 teaspoon dried oregano
  • ¾-1 cup extra virgin olive oil (buy the best you can afford)
  • salt and pepper to taste (I use 1 tbsp of salt, 1 teaspoon of pepper)

Instructions

  • In a medium bowl, combine the chopped parsley, red chilies, and minced garlic.
  • Add the red wine vinegar, lemon juice, and olive oil. Stir to combine.
  • Stir in the dried oregano, salt, and pepper.
  • Let the chimichurri sit for at least 15 minutes before serving to allow the flavors to meld together. Adjust the salt and pepper, to taste, if needed.

Notes

STORAGE: Store chimichurri sauce in an airtight container for up to 4 days.
