Ingredients

  • 3 tablespoons unsalted butter
  • 1 cup fresh strawberries cut small
  • 1 cup fresh blueberries cut small
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cup milk
  • 4 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • 1 loaf brioche or challah bread cut into 1 1/2 inch slices
  • Fresh mint and powdered sugar for garnishing (optional)

Instructions

  • In a hot large skillet on medium high heat, melt the butter. Then, add the berries and stir to combine. Add both sugars and stir everything together.
  • Bring the mixture to a boil, reduce the heat to low and cook, stirring slowly, for 1 to 2 minutes. Remove from the heat. (Your fruit should still have a bite. Don't cook too long!)
  • In a large bowl, whisk together the milk, eggs, vanilla, and cinnamon. Dip your bread slices into your milk/egg mixture and place on a hot, oiled waffle iron. Cook until finished.
  • Serve your waffles hot. Pour the fruit compote over your waffles. Garnish with fresh mint and a dusting of powdered sugar.
