Jerk Marinade

Equipment

  • 1 blender or food processor

Ingredients

  • 1 bunch scallions
  • 1/2 white onion
  • 8 garlic gloves
  • 2 tbsp chopped ginger
  • 1/2 cup brown sugar
  • 2 tbsps oil
  • 1/4 cup white vinegar
  • scotch bonnet peppers to taste. The more you use the spicier they will be. I use 2-3 orange scotch bonnets for the perfect medium spicy flavor
  • 1/2 juice orange
  • 1/2 juice lime
  • 1/8 cup browning

Spices

  • 2 tbsps all spice berries
  • 2 tsps kosher salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger

Instructions

  • Place all ingredients in a blender and blend until smooth.
