Ingredients

  • 2 pounds raw shrimp peeled, deveined, and patted dry
  • 3/4 cup Italian breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup finely chopped red onion
  • 2 tablespoons minced garlic
  • 1 large egg
  • 2 tablespoons mayo
  • 2 tablespoons dill
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest

Spices

  • 2 teaspoons old bay seasoning
  • 2 teaspoons paprika
  • 1 teaspoons garlic powder
  • 1/2 teaspoons black pepper
  • Butter for cooking
  • For serving: burger buns, lettuce, tomato, avocado

For the Sauce

  • 1 cup mayo
  • 1/4 cup ketchup
  • 1/4 cup sweet relish
  • 2 tablespoons hot sauce
  • 2 teaspoons cajun seasoning

Instructions

  • Add the shrimp to a food processor. Pulse until finely chopped. They should not be pureed completely, there should still be some texture.
  • In a large bowl, mix together the shrimp, breadcrumbs, cheese, onion, garlic, egg, mayo, dill, worcestershire sauce, lemon juice, lemon zest, and spices until combined.
  • Divide the mixture into 6 portions. Shape each into burger patties.
  • Heat a skillet over medium-high heat. Add butter and sear patties on both sides until golden brown (3-4 minutes per side).
  • Transfer seared patties to a preheated oven (350°F/180°C) for 8-10 minutes to ensure thorough cooking.
  • Mix together all of the ingredients for the sauce.
  • Toast the burger buns. Place the shrimp patty on the bun and add preferred toppings and sauce, like lettuce, tomato, and avocado. Serve hot.

Notes

  • Pat shrimp dry before chopping.
  • Sear first, then finish in the oven.
  • Don't overcook. Shrimp cook quickly, remove once the patties are firm and opaque.
  • Chill patties if needed. If the mixture feels soft, refrigerate the patties for 15-20 minutes before cooking to help firm them up.
