The Perfect Roasted Chicken

Ingredients

For the Chicken

  • 1 whole chicken
  • ½ tablespoon kosher salt
  • ½ tablespoon paprika
  • ½ tablespoon italian seasoning
  • 2 tablespoons extra virgin olive oil

For the sauce

  • ½ cup Crème fraîche or full fat greek yogurt
  • 8 garlic cloves crushed
  • 1 large shallot crushed
  • ½ juice lemon
  • 2 tablespoon rosemary chopped
  • 1 tablespoon parsley chopped
  • ½ teaspoon red pepper flakes

Instructions

  • Preheat oven to 400°. Season chicken with oil, and spices.
  • Place chicken on a cooking rack and a sheet. Bake chicken for 35 minutes.
  • While chicken is cooking, make your sauce by combining Crème fraîche, shallot, garlic, red pepper flakes and lemon zest and juice.
  • After 45 minutes, add dollops of sauce onto your chicken and bake for another 15 minutes.
