Cucumber Tomato and Feta Salad

A crisp, fresh and delicious cucumber, tomato, and feta salad that goes with everything! Pull it together easily to serve with any meal.

Ingredients

  • 2 large English cucumbers cut into 1/2-inch cubes
  • 12 ounces grape or cherry tomatoes halved or quartered
  • ¾ medium red onion thinly sliced
  • 8 ounces feta cheese crumbled

Vinaigrette

  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • 4 garlic cloves minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon fresh dill chopped
  • ½ tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic and herb seasoning
  • ½ teaspoon freshly ground black pepper

Instructions

  • In a large bowl, combine the cucumbers, tomatoes, and onions.
  • In a medium bowl, whisk together all the ingredients for the vinaigrette.
  • Pour the vinaigrette dressing onto the salad and toss to coat all over. Gently stir in the feta cheese. Serve the salad cold.

Notes

Storage: Store leftovers in a sealed container in the fridge for up to 3 days.
