Crisp, Fresh and Delicious Cucumber Tomato and Feta Salad
No matter what you’re cooking, you can serve it with this salad! All of the ingredients are easy to find so it works year round. But it’s especially great in the summertime when fresh produce is in season. Plus, it’s light and refreshing when it’s hot outside.
Everyone has their own twist on a cucumber and tomato salad. I make a simple honey Dijon vinaigrette which elevates the flavor of the salad while also adding salty feta cheese.
Here are some of the reasons I love this salad:
- QUICK: This easy salad comes together in less than 15 minutes. You can eat it immediately, but I recommend chilling it in the fridge for at least 30 minutes to allow the flavors to meld.
- EASY: The ingredients can be found in any grocery store and the steps are straightforward to follow. Even if you’re not an expert cook, you can still make this recipe without any difficulty.
- GOOD-FOR-YOU INGREDIENTS: Made with fresh produce, fresh citrus and a few pantry staples means this recipe is packed with goodness. It’s low calorie and a perfect way to sneak in more vegetables to your diet.
- VERSATILE SIDE DISH: Whether it’s meat, fish or vegetables, this recipe blends perfectly with the flavors of any main dish. It can also be served during any time of the day – breakfast, lunch, or dinner. It really is the perfect side dish!
- MAKE AHEAD: I always love a dish that can be prepped in advance. This one tastes even better once it’s been sitting for a day or so. It’s an excellent option for busy days and works great for meal prep.
Ingredients You Need
This tomato cucumber salad recipe uses simple ingredients that are easy to find at your local grocery store. See below for ingredient substitutions.
NOTE: The full list of ingredients with measurements is provided in the recipe card below.
- English Cucumbers: I love using english cucumbers for salads because they are crisp, have a thinner skin, and have fewer seeds. There is also no need to peel or deseed them.
- Cherry Tomatoes or Grape Tomatoes: The perfect tomato for this salad as they are packed with flavor is small pieces. You can also use regular tomatoes cut into small bite-sized pieces, if desired.
- Red Onion: This is the best type of onion to use for fresh salads as the flavor works well with the other vegetables.
- Fresh Dill: Fresh herbs are the perfect addition to a cucumber and tomato salad. I use dill for the best flavor, but you could substitute with fresh parsley or fresh mint, if desired.
- Feta Cheese: The star of the salad! The salty tangy flavor of feta cheese is the perfect addition. I use a block of feta cheese and crumble it.
- Fresh Garlic: A must for a classic vinaigrette with plenty of flavor!
- Fresh Lemon Juice: Adds a bit of acidity to the vinaigrette. Always use freshly squeezed lemon juice for the best flavor.
- Pantry Staples: You will need high quality extra-virgin olive oil, red wine vinegar, honey, and dijon mustard.
- Seasonings: I use Italian seasoning, salt, and pepper for this recipe.
Variations and Substitutions
- Omit the Feta: While I highly recommend using Feta cheese for this recipe, you can omit the feta to make this recipe dairy free. Feta is low-calorie and gets super creamy when mixed with liquids, making it perfect for this salad.
- Add Protein: If you want to make a complete meal, you can add grilled chicken breast, cooked salmon or cooked shrimp to the salad. I also love adding chickpeas to the salad for a boost of plant-based protein.
- Italian Dressing: While I highly recommend dressing the salad with the vinaigrette, you can also substitute for your favorite Italian salad dressing. Or even just a drizzle of olive oil or balsamic dressing.
- Diced Avocado: Add more healthy fats by adding chopped avocado to this salad.
- Kalamata Olives: If you are looking for more salty flavor, try adding a handful of chopped briny olives.
- Sun-Dried Tomatoes: If you’re looking for additional texture and flavor, try adding a few sun-dried tomatoes. They add a chewy texture and intense flavor.
- Bell Peppers: Chopped bell pepper is a great addition to this salad.
- Fresh Peaches: I love adding fresh peaches to this salad in the summer. It’s the perfect sweet and savory combination of fresh summer flavors.
How to Make Tomato Cucumber Feta Salad
- Toss the vegetables: In a large mixing bowl, combine the cucumbers, tomatoes, and red onions in a large bowl.
- Make the vinaigrette: In a small bowl, whisk together all of the ingredients for the vinaigrette – olive oil, red wine vinegar, garlic, lemon juice, Dijon mustard, dill, honey, salt, Italian seasoning, and black pepper.
- Add the dressing to the vegetables: Pour the vinaigrette over the vegetables and toss until well combined.
- Add the feta: Gently stir in the feta cheese until combined.
- Chill: Cover and chill in the refrigerator for at least 30 minutes to allow the flavors to combine.
