The rice is fluffy, the lime and cilantro adds a freshness thats delicious! I love making this and keeping it in the frige and pairting it with my favorite dishes like Lemon Pepper Chicken Thighs or Copycat Chipotle Steak!

What is Cilantro Lime Rice?

Cilantro lime rice is the perfect balance of bright, zesty, and herby flavors. It’s fluffy white rice infused with fresh lime juice, lime zest, and a generous handful of chopped cilantro, giving it a vibrant taste and color. This simple yet flavorful side dish pairs beautifully with everything from tacos to grilled chicken, seafood, or even a hearty bowl of beans. It’s fresh, light, and makes any meal feel complete.

Ingredients You’ll Need

  • Rice– I love using long grain white rice but you can use jasmine, basmati, medium grain or short grain!
  • Limes– This adds zesty that acidity
  • Cilantro– Adds fresh, pungent, citrusy, spicy, and nutty flavors
  • Salt– Kosher salt is my favorite to use in this recipe
