Copycat Chipotle Steak

Ingredients 

  • 1 7oz can of chipotle peppers in adobo sauce
  • 1/4 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 8 cloves garlic
  • 1 bunch cilantro
  • ½ juice of lime

Spices

Instructions 

  1. In a blender or food processor, combine the chipotle peppers, red wine vinegar, honey, oil, lime juice, cilantro, garlic, cumin, chili powder, and salt.
  2. Blend until smooth.
  3. Place the steak in a large bowl and pour the marinade over the steak. Save 1/4 cup of the marinade at set aside for later.
  4. Remove the steak from the marinade and shake off any excess.
  5. Sear the steak in a large, oiled-up skillet on high heat for 3-4 minutes per side. Remove.
  6. Let the steak rest briefly before slicing it thinly against the grain. Then, cubing it.
  7. Add cubed steak in the same skillet, with 1 tbsp of the reserved marinade, and saute for 20-30 seconds on high heat.
  8. Serve with your favorite sides, such as rice, beans, roasted vegetables, or tacos or burritos with your favorite toppings.

    This recipe is bang on to Chipotle. I make it twice a week now for myself and my kids. I’ve done it using steak and I have also done it using chicken both are delicious.
