Ingredients 

  • 6 Bone-in Chicken Thighs Skin on
  • 1/2 juice lemon
  • 1/3 cup extra virgin olive oil
  • 2 tablespoon parsley
  • 1 tablespoon honey
  • zest of a lemon

spices

  • 1 tbsp lemon pepper seasoning
  • 1 teaspoon red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons salt
  • 1 teaspoon chicken bouillon seasoning optional

Instructions 

  1. In a small bowl, mix together spices, oil, lemon juice, lemon zest, parsley and honey.
  2. Coat the bone-in chicken thighs with the marinade until fully incorporated. Marinate for 30 minutes or up to overnight.
  3. Slice a lemon into thin rounds, and place them on top of the chicken.
  4. Bake the chicken in the preheated oven for 35-40 minutes at 375°F, or until the chicken is fully cooked
  5. Once the chicken is cooked through, remove it from the oven, and let it rest for 5 minutes.
  6. Garnish the chicken with chopped parsley, and serve hot with your favorite side dish.

    I used half the amount of salt in this recipe because I ran out of it last minute but I think it was fine. And I added 1/4, teaspoon of chilli powder instead of chilli flakes due to very young children eating it and I didn’t want to risk it being too spicy, but I will add it next time.

    This was delicious.

    Will be adding a sprinkle of Parmesan to my left over piece tomorrow to see if that makes the dish even more perfect if that’s even possible.

    I also put too much chicken in the pan so the sides weren’t as nice and crispy as the top since they were all touching.

    This is going to be a weekly one in my house now.
