You all already know I absolutely love a good one-pot meal, and this Garlic Butter Steak and Potatoes is hands-down one of my favorites. Tender, juicy steak bites coated in a rich garlic butter sauce pair perfectly with Yukon gold potatoes. It’s pure comfort food on a plate. Whether I’m throwing together a lazy weeknight dinner or looking to impress with minimal effort, this dish always delivers. It’s simple, mouthwatering, and versatile enough for any occasion!
Garlic Butter Steak and Potatoes in a Skillet 😍
You can’t go wrong with steak and potatoes! This delicious dinner is a complete meal for busy weeknights or any special occasion. Juicy garlic butter steak bites combine with crisp potatoes to create an almost effortless gourmet meal.

Ingredients You Need
No fancy ingredients here. This steak and potatoes recipe is a classic home-cooked meal with common ingredients.

- Steak: Buy the best steak you can afford. I like to use NY strip or sirloin.
- Potatoes (Yukon Gold or Russet): Yukon Gold Potatoes definitely give this recipe a nice edge and are my go-to choice of potatoes for this recipe. However, you can use russet potatoes, if desired.
- Seasonings: You will need Italian seasoning, garlic powder, onion powder, paprika, and salt.
- Olive Oil: Use high quality extra virgin olive oil to cook the steak and potatoes in the skillet.
- Worcestershire Sauce: Adds a touch of creaminess and tang to the potato mixture.
- Browning Sauce (optional): Browning sauce is completely optional, but I like to add it to a lot of meat dishes to deepen the color and help brown the beef.
- Butter: Use unsalted butter for this recipe. Make sure to bring the butter to room temperature so it’s softened.
- Fresh Garlic: A must for the delicious garlic butter.
- Fresh Herbs: I use fresh rosemary, parsley and thyme but you can use whatever fresh herbs you have on hand!
How to Make Garlic Butter Steak and Potatoes
- Mix together the seasonings: Combine the seasonings in a small bowl and divide evenly.
- Make the herb butter: Once the butter is softened, mix together with the minced garlic and fresh herbs. Set aside until you are ready to use.
- Marinate the steak: Combine the cubed beef with the Worcestershire sauce, browning sauce (if using, and half of the spice mixture. Toss everything together until the beef is coated all over.
- Prepare and parboil the potatoes: Peel and cube the potatoes into small bite-sized pieces. Then, you must parboil the potatoes in boiling water for 5 to 6 minutes, just until they begin to soften. Parboiling just means you are boiling them for a few minutes before you continue to cook in the skillet. After you parboil them, let them cool, and season them with the other half of the spice mixture and 1 tablespoon olive oil.
- Cook the steak bites: Heat the remaining olive oil in a large skillet over medium-high heat. Once hot, add the steak in a single layer and sear on all sides for 5 to 7 minutes, until browned on all sides. Transfer to a plate and set aside.
- Finishing cooking the potatoes: Add the potatoes to the pan (still over medium-high heat) and cook for 10 to 15 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
- Stir everything together: Add the steak back to the skillet with the potatoes and stir in the garlic herb butter, until everything is well coated.

Recipe Tips
- Parboil the potatoes: Don’t forget to parboil the potatoes as this helps cook them before they are finished in the skillet.
- Use a cast iron pan: A cast iron pan is best for cooking steak as the pan heats evenly and is naturally nonstick. If you do not have a cast iron pan, you can use a heavy duty stainless-steel skillet. You may need to use more oil to cook in the stainless steel pan as they are more prone to sticking.
- Don’t overcook the meat: Nobody likes overcooked steak! Because the steak is cut into bites, it cooks quickly. I like to let the steak sear on each side for 1 minute or so, for a total of 5 to 7 minutes of cook time. Don’t overcook or the meat will be tough.

Did you skip the parboiling step? Potatoes take longer to cook than steak, so they need to be par-boiled and then cooked in the skillet individually. Make sure the potatoes are cooked completely before you add the steak to the pan.
I like to use sirloin steak, but you can use beef tenderloin or New York strip steak. Look for prime and choice cuts instead of select cuts. Prime and choice cuts are very tender, juicy and more flavorful due to the marbling. Avoid tougher cuts like skirt steak or flank steak.
Storage and Reheating
Store leftover steak bites and potatoes in an airtight container in the refrigerator for up to 3 days. Reheat in a pan with some olive oil set over medium-low or in an oven preheated to 350°F for 8 to 10 minutes, until warmed through.

Ingredients
- 3 teaspoons salt or more to taste
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 teaspoons Italian seasoning
- 2 teaspoons paprika
- 2 pounds cubed steak like sirloin, NY Strip
- 2 pounds Yukon gold potatoes peeled and cubed into small bite-sized pieces
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Browning sauce (optional, for color)
- 2 tablespoons olive oil
For the garlic butter:
- 6 tablespoons unsalted butter softened
- 2 tablespoons parsley chopped
- 2 tablespoons minced garlic
- 1 teaspoon salt
For garnish
- parsley
- red pepper flakes
Instructions
- In a small bowl, mix together the salt, garlic powder, onion powder, Italian seasoning, and paprika. Divide the mixture evenly into two equal portions, then set aside.
- In another small bowl, mix together the softened butter with the minced garlic and fresh herbs, until well combined. Set aside.
- In a large bowl, combine the cubed beef with the Worcestershire sauce, browning sauce (if using), and half of the spice mixture. Toss until the beef is evenly coated all over.
- Next, parboil the diced potatoes in boiling water for 5 to 6 minutes, just until they begin to soften. Drain and set aside. Once cooled, season them with the other half of the seasoning mixture and 1 tablespoon olive oil. Toss to coat all over.
- In a large skillet set over medium-high, heat the remaining tablespoon oil. Once hot, sear the steak for 5 to 7 minutes until browned on all sides. Transfer to a plate and set it aside. In the same skillet, add the parboiled potatoes and cook over medium-high heat for 10 to 15 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
- Add the steak back to the skillet with the potatoes, then stir in the garlic herb butter. Toss everything together, ensuring the steak and potatoes soak up all the buttery goodness. Garnish with red pepper flakes and parsley
