Ingredients You’ll Need
Cajun corn comes together with just a few ingredients. Always try to use the freshest corn possible to ensure the best results!
NOTE: The full list of ingredients with measurements is provided in the recipe card below.

- Fresh corn on the cob: This recipe is best when sweet corn is in season so you can find the freshest corn possible. If your grocery store only has corn that has already been shucked, that’s fine too. This recipe makes a lot of cajun butter sauce so you should have enough for 6 to 10 ears of corn.
For the Cajun Butter:
- Unsalted butter: Some of the seasonings already have salt so it’s best to use unsalted butter here.
- Honey: Adds a subtle sweetness to the corn which balances the spices. You can omit it, if desired.
- Lemon juice: Use freshly squeezed lemon juice. It adds a little zesty flavor that is perfect for the corn. You can also use freshly squeezed lime juice instead of lemon juice.
- Fresh cilantro: If you don’t like cilantro, you can omit it.
- Seasonings: You will need Old Bay seasoning, sweet paprika, adobo seasoning, and lemon pepper seasoning.
How to Make Cajun Corn
Easy cajun corn comes together with grilled corn a delectable cajun butter sauce. Fire up your grill and enjoy!

- Prep the corn: Peel back the husks on the corn, leaving them attached to the base of each ear of corn. Remove the silks and rinse the corn, then pat them dry.
- Grill the corn: Preheat the grill to medium-high. Place the corn on the grill and cook for 10 to 15 minutes, turning every couple of minutes to get that nice char, until the kernels are tender.
TIP: Pierce the corn kernels with a knife or fork to check for tenderness. They should easily pierce with a knife and should be nice and charred.

- While the corn is cooking, make the cajun butter: Melt the butter in a 12-inch cast-iron skillet on the grill. When the butter is melted, stir in the honey, lemon juice, cilantro, Old Bay seasoning, paprika, adobo seasoning, and lemon pepper seasoning until smooth.
- Finish the corn: Once the corn is grilled to perfection, use a basting brush to brush it gently all over with the seasoned butter. Serve the corn hot.
Chef’s Kiss
For a kick of heat you can add a pinch of cayenne pepper or two to the cajun butter. This adds extra flavor to the buttery corn.

Cajun Butter Corn

Ingredients
- 6 ears whole corn
- 2 sticks unsalted butter
- ¼ cup honey
- juice of half of lemon
- 1 tablespoon finely chopped cilantro
- 1 tablespoon Old Bay seasoning
- 1 tablespoon sweet paprika
- 1 teaspoon adobo seasoning
- 1 teaspoon lemon pepper
Instructions
- Preheat the grill to medium-high heat.
- Peel back the corn husks, leaving them attached to the base of each ear of corn. Remove the silks and rinse the corn, then pat dry.
- Place the corn on the grill and cook for 10 to 15 minutes, turning every couple of minutes. You'll know it's perfect when the kernels are tender and have those deep charred marks – the little bursts of carmelized gold. Pierce a kernel with a knife to check for tenderness, and keep turning until you've got that perfect balance of char and sweetness.
- Meanwhile, make the butter: Set a 12-inch cast-iron skillet on the grill and melt the butter. When the butter is melted, stir in the honey, lemon juice, cilantro, Old Bay, paprika, adobo seasoning, and lemon pepper until smooth and fully combined.
- Once the corn is grilled on all sides, use a basting brush to brush it gently with the seasoned butter. Serve hot.
