Popeyes Fries

- 3 large potatoes Russet or Idaho
- 2.5 cups flour
- 2 cups seltzer water or club soda
- 2 tbsps corn starch
Secret sauce
- 1/2 cup mayo
- 1/2 cup sweet chili sauce
- 1 tbsp cajun seasoning
- 1 tbsp honey
Begin by peeling potatoes and slicing into thin strips.
Rinse potatoes with warm water until water runs clear.
Pat potatoes dry, set aside.
Mix all seasonings together, and separate seasoning into two parts.
Mix flour, corn starch, and 1/2 your seasonings mix. Then, slowly whisk in the seltzer water until a thick batter develops.
Dip fries into batter and begin frying at 375 degrees in small batches until fries are golden brown.
Season with other part of the seasoning mixture.
Serve with sauce
