These freezer breakfast sandwiches are my go-to for busy mornings! I love having these on hand because they are super simple and highly customizable. After freezing, you can simply pop them in the air fryer or oven to reheat.

Whether or not you like meal prep, it makes meals so much easier. Breakfast sandwiches are one of the best things to meal prep because they are easy to make and taste amazing anytime.

Don’t skip the most important meal of the day. Stock your freezer with frozen breakfast sandwiches. They come together easily with English muffins, baked eggs, sausage, cheese, and a bit of maple butter. Yum!

  • English muffins – You could also use bagels if you prefer! I like to baste them with melted butter and maple syrup before I toast them in the oven for extra flavor.
  • Eggs
  • Milk – Helps to make the eggs nice and fluffy.
  • Sausage – You can use ham, bacon, turkey bacon, turkey sausage, chicken sausage, or a meat substitute if you like! I like to use a combination of ground mild breakfast sausage and ground beef. 
  • Spices – Adding spices to the sausage is optional, but I love the flavors that come from adding brown sugar, Italian seasoning, garlic powder, onion powder, and red pepper flakes. You will also need salt and white pepper for the eggs.
  • Cheese – I used sliced cheddar cheese, but you could use American cheese, Swiss cheese, or whatever your family loves!

How to Make Freezer Breakfast Sandwiches

Eggs, milk, white pepper and salt are mixed together in a blender.
  1. Make fluffy eggs: Use a blender to blend the eggs with milk, salt, and white pepper. Once smooth, pour into a prepared 13×9 dish lines with parchment paper. Bake 20 minutes at 350°F, or until the eggs are set. Set aside to cool.

  1. Make sausage patties: Combine ground sausage and ground beef (or another meat of your choosing) with spices. Shape patties to be roughly 5-6 ounces each.

  1. Cook sausage: Cook in a large skillet over medium-high heat for 5-6 minutes on each side, or until cooked through. 
  2. Toast the English muffins: Slice the bread, then baste it with a combination of melted butter and syrup. Toast in the oven until they reach your desired level of crispiness.
  3. Cut the eggs to fit: Using a biscuit cutter, cut the slightly cooked baked eggs to fit onto the sandwiches. 
  4. Assemble the freezer breakfast sandwiches: To assemble, place a round of eggs, a slice of cheese, and a sausage patty on each bottom half of your English muffin or bagel. Top with the second half.
  5. Store: Wrap each sandwich in parchment paper. Store the wrapped sandwiches in a Ziploc bag in the freezer.

Expert Tips

  • Don’t dry out your eggs. I recommend baking the eggs with a pan of water underneath them so they don’t dry out during cooking. 
  • Make your own sausage patties. I like to do this myself to control the salt and spice levels. 
  • Remember, sausage shrinks! Your raw patties should be larger than the bread because they’ll shrink significantly as they cook.

Variations and Substitutions

  • Bread: Feel free to use whole wheat English muffins, bagels, or any other type of bread you prefer.
  • Meat: I love these freezer breakfast sandwiches with homemade sausage patties, but you can use store-bought sausage, chicken sausage, turkey sausage, bacon, ham, or whatever kind of meat you love!
  • Cheese: Sharp cheddar cheese is my go-to, but you can switch it up with pepper jack cheese, American cheese, Swiss cheese, or whatever you have on hand. 
  • Other add-ons: Pile your sandwiches high with spinach, avocado, tomatoes, or other veggies to make them healthier.

Storage and Reheating

To freeze, wrap each sandwich individually in parchment paper, then place them in a Ziploc bag. Keep them in the freezer until you’re ready to enjoy them. They will keep in the freezer for up to 2 months.

To reheat, I like to air fry my sandwiches so they are nice and crispy. But you can also use the microwave, oven, or toaster oven.

Ingredients 

For the eggs

  • 12 large eggs
  • ¼ cup milk (optional, but it keeps the eggs fluffy)
  • 1 teaspoon salt
  • 1 teaspoon white pepper

For the sausage patties

  • 1 pound ground sausage mild breakfast sausage is best!
  • 1 pound ground beef you can also use ground chicken, ground turkey!
  • 1 tablespoon brown sugar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 tablespoon oil

For the sandwich

  • 6 english muffins
  • 2 tablespoons melted butter
  • 1 tablespoon pure maple syrup
  • 6 slices cheese

Instructions 

  1. Preheat the oven to 350°F. Line a 13×9-inch baking dish with parchment paper.
  2. In a blender, add the eggs, milk, salt, and white pepper. Blend until smooth, then pour into the prepared dish. Bake in the preheated oven for 20 minutes, until the eggs are set. (I like to place a pan of water in the bottom of the oven while baking underneath the egg pan so that the eggs stay moist.)
  3. While the eggs are baking, combine the ground sausage, ground beef, brown sugar, Italian seasoning, garlic powder, onion powder, and red pepper flakes until well combined.
  4. Shape the mixture into 5- to 6-ounce patties and place them on a plate or a baking sheet lined with parchment paper. You want your patties to be slightly larger than your English muffins as they will shrink during cooking.
  5. Heat the oil in a large skillet over medium-high heat. Sear the patties for 5 to 6 minutes on each side, until cooked through. Set aside.
  6. Slice the English muffins in half and baste with some melted butter and syrup. Toast the muffins in the oven, then use a round biscuit cutter or cup to cut circles into the eggs, the size of your English muffins.
  7. Assemble the sandwiches by adding the egg to the English muffins, and top with the cheese and cooked sausage patties.
  8. Wrap each sandwich in parchment paper and store in a ziploc bag in the freezer for up to 2 months. Reheat in the air fryer or oven.
