The Best Beef and Broccoli 😋
You have a lot of choices for dinner. If you make my recipes regularly or are making this recipe for the first time, I know you’ll love it.

Ingredients You Need
NOTE: The full list of ingredients with measurements is provided in the recipe card below.

- Steak: I like to use flank steak as it’s tender, flavorful and cooks quickly. You can also use skirt steak or top sirloin.
- Broccoli: Use fresh broccoli florets for the best texture and flavor.
- Fresh Garlic and Ginger: This is used as the aromatics for the vegetables. Use fresh garlic and ginger for the best flavor.
- Beef Broth: Serves as the base of the sauce. Use low-sodium beef broth if you are watching your sodium intake.
- Rice Wine Vinegar: You can substitute with apple cider vinegar or white wine vinegar, but it may change the flavor slightly.
- Dark Brown Sugar: You can use light brown sugar, if needed, but dark brown sugar has a deeper, more complex flavor.
- Dark Soy Sauce: I use dark soy sauce to give this dish that nice dark color. Low-sodium soy sauce is preferred.
- Cornstarch: Helps tenderize the beef and create that nice glossy finish.
- Hoisin Sauce: Adds a rice, savory flavor to the sauce.
- Oyster Sauce: Adds savory, salty, umami flavor.
- Oil: Choose an oil with a high smoke point like canola, vegetable or peanut oil.
- Browning Sauce: Use this to add color and deepen the flavor. It’s entirely optional though.

You may notice that I use browning sauce in a lot of my recipes. Browning sauce adds rich, dark color and a depth of flavor to dishes like stews and meats.

How to Make Beef and Broccoli Stir Fry
- Marinate the Beef: Slice the beef into thin strips. In a large bowl, whisk together the cornstarch, soy sauce, rice wine vinegar, brown sugar, oyster sauce, hoisin sauce, salt and browning sauce (if using.) Cover and marinate in the fridge for 20 to 30 minutes (or up to 1 hour). You can start the marinating process while you continue with the other steps.
- Prepare the Sauce: In a small bowl, whisk together the beef broth, brown sugar, and hoisin sauce until smooth. Set aside.

- Blanch the Broccoli: I like to blanch the broccoli in a large pot of water for 2 to 3 minutes, until bright green and just tender. Drain and set aside.
- Cook the Aromatics and Beef: Heat the oil in a large skillet or wok over medium-high heat. Once the oil is hot and shimmering, add the garlic and ginger. Saute for 30 seconds, stirring frequently, until fragrant. Add the beef in a single layer and cook for 3 to 5 minutes, stirring occasionally, until browned and mostly cooked through.

- Add the Sauce and Finish: Pour the sauce over the beef and stir to coat all over. Add the broccoli and toss everything together. Cook for 1 to 2 minutes, until the sauce thickens and the broccoli is heated through.
Chef’s Kiss
Serve the beef and broccoli stir fry with white or brown rice or noodles. Drizzle the dish with extra sauce from the pan. You can garnish with sesame seeds or sliced green onions, if desired.
Recipe Tips
- Prep all of your ingredients before cooking: To make the cooking process smooth, I like to have all of my ingredients prepped and ready to go before starting the cooking process (ie: mise en place.) Everything cooks quickly so this makes things a lot easier.
- Use other vegetables: You can replace up to half of the broccoli with other vegetables like snap peas, sliced bell peppers, carrots, and mushrooms. For additional crunch, you can add water chestnuts or unsalted cashews.

Make Ahead and Storage
This recipe reheats really well so it’s a great lunch or dinner to make ahead.
Store leftover beef and broccoli in an airtight container in the fridge for up to 3 days. To freeze, store in a freezer safe bag or container for up to 3 months. Thaw in the fridge before reheating.
To reheat, toss everything together in a skillet on the stove until heated through.

Easy Beef and Broccoli Stir Fry

Ingredients
For the beef:
- 2 tablespoons cornstarch
- 2 tablespoons dark soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon brown sugar
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon salt
- 1/2 teaspoon browning sauce (optional, for color)
- 2 pounds flank steak or top sirloin thinly sliced against the grain into short strips
For the sauce:
- 1/4 cup beef broth
- 1/4 cup dark brown sugar
- 1/4 cup hoisin sauce
For the veggies & aromatics:
- 4 cups fresh broccoli florets
- 1 to 2 tablespoons neutral oil (vegetable or canola)
- 3 tablespoons minced garlic
- 3 tablespoons minced fresh ginger
- Cooked rice or noodles for serving
Instructions
- Marinate the beef: In a large bowl, whisk together the cornstarch, soy sauce, rice wine vinegar, brown sugar, oyster sauce, hoisin sauce, salt, and browning sauce (if using). Add the sliced beef and toss well to coat. Cover and marinate for 20 to 30 minutes (up to 1 hour) in the fridge.

- Cook the aromatics and beef: Heat the oil in a large skillet or wok over medium-high heat. Once the oil is hot and shimmering, add the garlic and ginger. Saute for 30 seconds, stirring frequently, until fragrant. Add the marinated beef in a single layer and cook for 3 to 5 minutes, stirring occasionally, until browned and mostly cooked through.
- Add the sauce and finish: Pour the sauce over the beef in the pan. Stir to coat the beef all over. Add the blanched broccoli and toss everything together. Continue cooking for 1 to 2 minutes, until the sauce thickens and the broccoli is heated through. Add extra browning sauce, if needed, for a dark color.
- Serve hot over steamed rice or noodles. Drizzle with extra sauce from the pan.
