This homemade fried rice recipe is a takeout classic that everyone loves. I created my own version of this classic dish by using soy garlic butter, shrimp, leftover white rice, and a few other ingredients. The entire meal is topped off with a drizzle of homemade yum yum sauce.

Ingredients You’ll Need

- Protein: I like to use shrimp, but you can also use chicken, pork, fish or tofu. Any size shrimp will work, but I find that medium-sized shrimp or large shrimp work the best for this recipe.
- White Rice: You can use day-old rice or make fresh rice before making the fried shrimp. Either way, you can just add the cold rice right to the pan. You can use jasmine rice or long grain rice.
- Peas and Carrots: I use frozen peas and carrots but you could even substitute with other veggies like diced bell pepper.
- Eggs: A must for classic fried rice. You can omit, if needed.
- Onion: Yellow onion is preferred, but you can use white or red onion too.
- Garlic: Always use fresh garlic for the best flavor.
- Ginger: Fresh ginger is always best.
- Butter: You will need unsalted butter for the garlic butter.
- Soy Sauce: Use reduced sodium soy sauce, if desired.
- Oyster Sauce: Adds classic flavor to the fried rice.
- Sesame Oil: The preferred oil for Chinese cooking.
- Cornstarch: Helps to coat the shrimp.
- Ginger Powder: Adds a delicious flavor to the fresh shrimp.
- Scallions (optional): You can garnish the fried rice with scallions or green onions.

For the Yum Yum Sauce:
- Red Wine Vinegar
- Mayo
- Melted Butter
- Ketchup
- Sugar
- Paprika
- Ground Ginger
How to Make Shrimp Fried Rice
- Prepare the soy garlic butter: Mix together the softened butter, soy sauce, and minced garlic. Set aside.
- Prep the shrimp: In a medium bowl, combine the sliced shrimp, 1 tablespoon sesame oil, soy sauce, cornstarch, and garlic powder. Mix well and set aside.

- Cook the shrimp: Heat 1 tablespoon of sesame oil in a large wok. Sear the shrimp in the hot pan on all sides until fully cooked. Remove from heat.
- Cook the veggies and eggs: In the same wok, sauté the onions, garlic, and ginger until the onions become translucent. Then, add 1/2 of the soy garlic butter. Push the onion mixture to the side of the pan and add the eggs to the other side of the pan. Scrambled until the eggs are cooked. Add the peas and carrots and stir until everything is combined.
- Finish the rice: Add the cooked rice, soy sauce and oyster sauce. Mix well until the rice is coated all over.

- Add the shrimp: Chop some of the shrimp (leave some whole pieces) and add all of the cooked shrimp to the wok. Cook, stirring occasionally, until the shrimp is hot.
- Serve the yum yum sauce with the warm rice. Garnish with chopped scallions, if desired.
Make the Yum Yum Sauce
In a small bowl, whisk together the mayonnaise, butter, ketchup, rice vinegar, paprika, sugar, and ginger. Add up to 1/4 cup water to thin out as desired.

Shrimp Fried Rice with Yum Yum Sauce

Ingredients
For the soy garlic butter:
- 4 tbsps softened butter
- 1 teaspoon soy sauce
- 1 tsp garlic minced
For the shrimp:
- 1 pound large shrimp peeled and deveined
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon ginger powder
For the fried rice:
- ¼ cup onion chopped fine
- 2 tablespoons fresh garlic chopped fine
- 2 tablespoons fresh ginger chopped fine
- 2 eggs
- ½ cup peas and carrots
- 2 cups cooked white rice
- ¼ cup low sodium soy sauce
- ¼ cup oyster sauce
For the yum yum sauce:
- 1 cup mayo
- 1/4 cup melted butter
- 1 tablespoon ketchup
- 1 tablespoon rice wine vinegar
- 1 tablespoon paprika
- 2 teaspoons sugar
- 1/2 teaspoon ground ginger
- 1/4 cup water as needed (if you want a thinner sauce)
- Sliced scallions (optional, for garnish)
Instructions
