These mushroom chicken thighs are amazing! Perfect for an easy weeknight dinner! I make these all the time! You can pair them with mashed potatoes, rice, and veggies or even eat them on their own!
The flavor of this chicken will ROCK your world! Anytime I’ve ever made this chicken for someone, they’ve begged me to make more.
Mushroom Garlic Chicken
Ingredients
For the Chicken
- 4 chicken thighs or thin chicken breasts I prefer thighs for this recipe, but breasts will be tasty too!
- 2 tbsps olive oil
- 1 1/2 tsp salt
- 1 tsp pepper
For the Stew
- 4 tbsps butter unsalted
- 8 oz sliced mushrooms I like to use button mushrooms and slice them on my own but you can buy mushrooms too!
- 1 medium white onion sliced thin
- 2 tbsps garlic minced
- 2 cups chicken broth
- 3 tbsps flour
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- bunch of thyme
Instructions
- Start by slicing mushrooms, onions, and mincing garlic.
- If using chicken thighs, pat them dry. Season your chicken with salt and pepper on both sides.
- Sear on high heat for 3-4 minutes on each side or until light golden brown, remove from the pan.
- In the same pan you seared your chicken, sautée your onions garlic and mushrooms.
- Add in butter, spices, and flour and stir for one minute.
- Add in chicken broth, and thyme and mix. Place your chicken back in the pan. Cover and cook on low heat for 15-20 minutes or until the chicken is fully cooked.
- Spoon your gravy over the sauce, garnish with parsley. Serve.

Absolutely delicious. I wanted way more sauce because I wanted to be able to put it over pasta, and I had a pound of mushrooms from the store, so I doubled all of the sauce ingredients. It made a lot more sauce than I really needed. I also wanted something more hands off and more of a braise, so after I brought the sauce to a boil, I put the chicken thighs back on top and transferred the pan to a 350° oven for 45 minutes.
Absolutely loved this meal with brown rice and brussel sprouts! I just had to cook it a little longer since I used bone in thighs!!
