Ingredients
  

For the Chicken

  • 1 lb thinly sliced boneless chicken breast
  • 1 tsp salt
  • 1 tsp freshly cracked black pepper
  • 2 eggs beaten
  • 1 cup italian breadcrumbs
  • 1 cup flour

For the Ceaser Dressing

  • 1 cup mayo
  • ½ cup parmesan cheese shredded
  • 1 tbsp Worchestchire sauce
  • 2 tsps anchovy paste
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 2 tbsp dijon mustard
  • 2 heads of romaine lettuce
  • oil for frying ing chicken
  • 4 large 12" tortilla or burritos

Instructions
 

  • Season the chicken breasts with salt and pepper.
  • Place the flour in a shallow dish, beat the eggs in another shallow dish, and place the breadcrumbs in a third shallow dish.
  • Dredge each chicken breast in the flour, then dip it in the beaten egg, and finally coat it in the breadcrumbs, pressing the breadcrumbs to adhere to the chicken.
  • Heat the oil in a large skillet over medium-high heat.
  • Place the chicken breasts in the skillet and fry for 5-6 minutes on each side, or until golden brown and crispy.
  • After cooking the chicken in the pan, remove it and let it rest for a few minutes. During this time, make the Caesar dressing by whisking together garlic, dijon mustard, Worcestershire sauce, lemon juice, and anchovy paste. Then, mix in mayonnaise, and finally, add Parmesan cheese. Add salt and pepper according to your taste.
  • To assemble the wraps, place a tortilla on a flat surface and spread a generous amount of Caesar dressing on it. Add a handful of chopped romaine lettuce to the tortilla, followed by some of the sliced chicken and grated Parmesan cheese.
  • Roll the tortilla tightly around the filling, tucking in the sides as you go.
  • Sear the wraps on high heat for 1 minute on each side. Slice and serve.
